Remember last Thursday, when I said I was making & taking the cake for my best friend’s wedding?
I was seriously freaking out about making this cake. As the wedding week crept closer, my anxiety meter was swinging off the charts. What if I screwed it all up. What if it was hideous. What if I couldn’t get the icing just right and the bride was horribly disappointed. What if the cake collapsed, slid, or otherwise fell apart during the 4 hour drive to the wedding site. I was so worried that for a moment I seriously considered spending my own money to purchase a vegan cake for her.
But then Thursday rolled around, and I bit the bullet and made the cake. It took a loooong time. After spending about 5 hours the previous night baking the layers, I then spent a good 6 hours Thursday whipping up batch after batch of icing, and then decorating the cake.
When I was done I literally did my own little private happy dance, right there in the kitchen. The cake was done, it just barely fit in the fridge, and it looked ok. I had just enough time to practice my violin for the wedding ceremony, pack up, and be ready to go.
Then Friday morning arrived, and I was freaking out again about the car ride.
We pulled the cake out of the fridge and boxed it up. Carefully.
Then I bungee-strapped it into the car. If the box was stable, hopefully the cake would be too. We then covered it with a huge towel to help insulate it from the sun, and hit the road.
Four hours and only one wrong turn later, I exited the car – frozen from the nonstop blasting of the A/C and tired from cringing at every bump and sharp turn in the road. I took the cake inside where, as the bride and friends watched, I cut the box open to find it unharmed. Woohoo!
The next night the cake I received many compliments, so I’m guessing it was a success. I have to admit it looked pretty cute on its own little table, with two birds standing on top of it.
And after the beautiful bride and her groom cut (and face-smashed) the cake, the guests ate it. And from what I could tell, no one knew guessed it was vegan!
At the end of the day, I was happy to be able to save Crysty and Andrew some money while making such a personal contribution to their special day. They’re one amazing, wonderful couple that I’m more than happy to stress myself out for. 🙂

I’m so impressed, Jane! Really, really nice job! It’s so cute and I’m sure your bestie will always remember this special cake! And I’m especially impressed that it didn’t get messed up on the 4-hour drive over there! That took a lot of grit and a ton of patience!
