Garden Update: We’re Beet

Last week I pulled this out of my garden:

Beets! Lots of beets!

In the spring I had planted ‘microgreens.’  Well when I forgot to pick them, and they grew bigger, I realized they looked like beet plants.  So I left them.

Sure enough, they turned into real beet plants.  I guess ‘microgreens’ are really just veggies that you harvest the leaves off of before they get bigger than 2 inches long or something.  Seems silly, if you ask me.

Anyway, I was pleasantly surprised to see that I accidentally successfully grew beets!

We cooked them up and had a fantastic salad for dinner.  Some were dark red, others were golden. It was really freakin’ exciting to know that I grew the beets.

As for the tomatoes that I finally planted in July (or whenever) – well they’re still not ripe.  In fact they’re the size of green golf balls.  So I may not get any of them this year.  But at least with all this rain I haven’t ever had to water my garden this summer!

Speaking of rain, is anyone else knee-deep in water?  (Literally OR figuratively?)  I love rainy weather so I’m happy, but it’s starting to be a bit absurd.  And my poor dog is going to die of a heart attack if there’s one more thunderstorm.

    YUM! I grew beets last year and then had no idea what to do with them. Well planned, on my part. Your salad looks amazing :). I also planted by tomatoes waaaayyyy late and am holding out hope that we might get a few. Maybe???

    I’m a huge fan of beets!  That salad looks like heaven to me.  Yum yum!

    This rain is crazy!!!!  My tomatoes are large but still green too…however they haven’t seen the sun in lots ‘o days.  I had good luck with little baby tomatoes- they got red early (June?), had lots of tomatoes and are still continuing.  Maybe try that next year.

    Your accidental beets look better than my purposeful beets!   I don’t think Georgia is a great beet climate.   Melissa and I made a fantastic beet and orange salad last fall.  I’ll try to find the recipe for you.  
    ‘Wish you could send us some of the water — my tomatoes have shriveled from lack of rain.  Very strange weather this summer!

    I’ve never successfully grown beets!  I’ve tried many times, but they always end up small and spindly.  I didn’t grow anything at all this year, since I moved in July.  Maybe next year!

    I’ve never like beets, but we joined a CSA this year and received beets in one of our first boxes. I cooked them up greens and all, and they were delicious so I am definitely envying your bounty of accidental beets big time!
     
    Ditto the water-logged thing. We’re in MD so we’re knee-deep in water too, and the pups are definitely tired of the thunderstorms. The one we had Wednesday night was just horribly loud and frightening!
